Also I noticed that after Rennik informed me that Defy and his men were being held in the jail cell of the Guild, I went to see them and nobody is in there. Does that mean they've escaped?

How could you have gone to see them? You shouldn't even be allowed down there after immaculate kidnapping is completed.
