There are either 62 or 63 quests you can complete, depending on what you did with the sheep. There are 494 places you can visit, so you are missing a few.

Look for any holes in the maps around Guynmart
Look For any holes in the maps east of Loneford
There are some new maps on the way to Remgard. Stay north of the river

I think the last guy doing that wasn't even graced with an answer. Probably because the answer was already in the question:

I know it's been mentioned time and time again that you don't have an exact release date, and that the best guess you can give is "soon", but ...

Your best bet is this:

There are two unknowns:
- What bugs the beta testers will report, and how long it takes to fix them.
- How fast I'll be able to perform the remaining work to ensure a high quality release.

Overall, I'm thinking weeks, not months, but who knows...
