It could be done with a pair of scripts. When you enter room with the merchant it swaps the NoFG for a different NoFG. When you exit the room it switches them back.

Still have to do it through a dialogue script. You can't do it from the merchant's inventory.
And you can't swap the NoFG in the inventories and you can't even swap inventory so you have to swap the entire NPC.

You can switch it in inventory. It would say that you gained an item though, which would be weird. If you sold it the merchant would also have the "other" NoFG. I'm not sure that a big deal though.

The NPC inventory is, but the player inventory is not.
Anyway, this conversation has moved to Zulip, and we should continue it there.
