Probably just an assumption based on the fond memories of the older rpg games that were so challinging
My opinion classic rpg teaches challange and excites players who want thoes challanges
One of my favorites i havent beaten in 12 years but a few times a year i dig it out and grind for a few days hoping to get strong enough to beat the final boss (and recharge the battery so i dont lose the save game)
that game Phantasy star 2 and for some reason i just cant seem to finish it
But you definatly seem like a strong player seeking a challange none the less

As far as easy mode goes perhaps just starting out with bonus stats?? Give the player a jump start that they dont have to earn. Thus removing the risk of dying in the first locations
if they are given stats equally devided of 12 character levels (+3 lvl ac, bc, ad and hp) as they work through the first missions they will grow their characters and stay essentially ahead of the curve
I personally like the idea of game wrap around completing the game and leveling up to the next difficulty (continuing with the same character)
perhaps easy could be plus 12 levels

And hard with a 12 level handicap thus a starting negative ac bc ad and health but hard mode only enabled after completion as to not make it impossible
Implementing the easy mode portion of this i think could be pretty easy although i dont really know (the only programming experience i have ever done was on a TI83plus) but correct me if im wrong it would be a few new buttons and attaching a different starting value on the characters base stats
A couple of possible flaws i see in this though is
Hard mode wouldent be acheiveable untill the game is completed (not feasible for use for beta testers)
Easy mode might be too easy at the start making it undesireable to play (although normal mode would be the sensible option then)
Untill the full game is completed playing easy then changing to normal would require a new character may become confusing for new players trying out multiple game modes
