You're right about all-inclusive strategy decisions which makes this game cool. I'm also a big fan of grind & lvl up - that's why I would like to share some advice with you.
First of all...
From the begining DON'T upgrade your health. The reason is... IF1 is able to handle it + focus on the accuracy + def instead. Of course, look at my list:
Kaila's boots & gloves + Necklace of the protector are the best items from the begining of your journey.
P. S. Don't forget to use 4 AP sword + shield + [CS1 - CS2] while battling a litches - you will thank me later

This is not the only course of attack. There are many different ways for you to play this game. This is just one of them.
IMO, quick learner and merchant are wastes.

In the very begining of the game Quick Learner's skill was kinda mess with 5%, but now it's somehow good at grind more exp. I wouldn't mind to skip Merchant's skill, but at least it has to be done. How can I be a merchant without that skill?

I experiment a bit with playing styles, but I always come back to trying to have most or all of the following by level 25 (permadeath):
- 2× Polished Ring of Backstabbing
- Feline boots and gloves
- Serpent's Hauberk
- Jewel of Fallhaven (necklace)
- Irogotu's Necklace
- Dark Protector (helmet)
- Guynmart Shield
- Flagstone's Pride (sword)
- Shadow of the Slayer (axe)
In different combinations, this equipment list supports offensive, defensive, or hit-and-run fighting styles as circumstances dictate. I'll sub out a couple of items later in the game, but for the most part these will carry a character safely through dozens of levels, even in permadeath mode, and I've been disappointed with other combos I've tried
